Dear Bakers

I hope everyone is enjoying the start to Autumn - maybe you are brightening your day up with a spot of baking!

It’s been so great to be back in the kitchen baking with my students - I really missed that during lockdown. I am still running a few classes in my kitchen over the next 7 weeks, but I have also started offering Zoom classes. I will be honest with you, I personally didn’t think a baking class on Zoom was going to be great. But, I was very much mistaken! What I didn’t think about when I started offering Zoom classes, was that this is a chance to connect with people all over the world! I have met a lot of new, wonderful students via Zoom, but I have also had the opportunity to bake with students who I haven’t seen for a couple of years! So amazing.

Here is some feedback for a regular Zoom baker:

This crazy pandemic has been a real bummer and the only thing that makes me and everyone else around me really happy is baking. Thankfully Maria has expanded her baking classes to the Zoom platform and despite the fact that I live in New York, I can feel like I'm in London baking along with her. She is such a wonderful and patient instructor, answering all our questions, improving our techniques and celebrating our bakes! I'm completely addicted and am constantly checking to see what new Zoom classes she's added. Taking an in-person class is still on my bucket list, but while we're all stuck at home this is an amazing option and would recommend it to bakers of all levels.”

So Zoom is here to stay - and stay connected doing what I love, baking. Check out my class calendar and join me for a 2 hour zoom class. It would be great to see you again!

Finally, every year I do a lot of private baking classes in the lead up to Christmas. These are mainly corporate classes but also classes for families and friends. This year these classes will be virtual. They will still be fun, so please do get in touch if you want to do something Christmassy with your work mates or friends. You would need to source your own ingredients, but hopefully that shouldn’t be a big problem!

CHRISTMAS BAKING

This year my Christmas baking classes will all be virtual. Each class is 2 hours long and costs £30. At the moment I have two types of scheduled Christmas Classes:

Panettone & Gingerbread Cookies ( 6 Dec at 7pm, 9 Dec at 7pm)

Stollen & Mince Pies (29 Nov at 7pm, 8 Dec at 10am)

I am thinking about adding another class where we’ll do Florentines, truffles and something else - most likely with chocolate as I plan to teach you how to temper chocolate during this class! fun right?

We can do any of these classes as a private class for you - just pick a time and date and I’ll be (virtually) there :)

PANETTONE

In this 2 hour class I will teach you how to make a delicious Italian Panettone. It is a far cry from the boxed up Panettone from the the deli - which tastes more like sawdust than Christmas. And why can it keep for so many weeks?!?

STOLLEN

If you haven’t tasted Stollen yet, then let me be the one to introduce you to this delicious German Christmas bread. It’s full of flavour but the highlight is the marzipan. I know I am biased, but do yourself a favour and see if you can source some Danish marzipan. It just taste better #fact

Dear Bakers

I hope everyone managed to have a good long weekend even with the current situation. Despite having lived abroad for almost 20 years, this is the first year that I have not spent Easter with my parents. If this pandemic has taught me one thing, then it is not to take anything for granted. Next time I see my family in Denmark I will hug them so hard that it will take someone with Pippi Longstocking strength to pull me off!

As you know, Bake with Maria has closed its doors for the duration of Coronavirus. However, I’m grateful for the amazing feedback you continue to provide, both via email and TripAdvisor.

While we have closed our physical doors, we have opened our ‘virtual’ door…

BAKE YOURSELF HAPPY - #BAKEATHOMEWITHMARIA

If you can get hold of baking ingredients, then I am here to assist you in the kitchen!

Instagram: I am currently doing one live bake-a-long video per week. If you follow me you will get all the details regarding ingredients, equipment and when we go live. The video will stay on Instagram in my stories for 24 hours.

Youtube: I have a YouTube channel where you can find bread and cake instructional videos. I will upload all my videos from Instragram to my YouTube channel as well.

Zoom: I have successfully run quite a few private classes on Zoom. This is a great way to hang out with friends and/or family whilst creating something together and keeping the social distance. If you are interested in a private zoom class, then please get in touch and together we can decide on the baking menu. We will of course cover substitutions and tailor the class to skills levels and equipment available.

Email: I reply daily to emails from previous students regarding recipes and ingredients. Please keep them coming! Any baking questions - shoot me an email.

Culinary Holiday in Tuscany: I sadly had to cancel my Culinary Holiday in Tuscany this year. It would have been our 10th year anniversary. BUT the date has already been set for 2021 and some people from this year has signed up as well as a lovely group from Seattle who joined us a few years ago and ready to come back to beautiful Villa Boccella. So if you need to plan something nice for post Corona then pencil in the 2nd-7th May 2021!

Future Baking Classes: For all of my students who had signed up for classes in March and April I offered either a gift voucher so they can book another class post Corona or a refund. Luckily for me the majority of you chose the gift voucher option and I can’t thank you enough. Once we are post-Corona I will schedule weekday and weekend baking classes and let everyone know so they can book themselves in - I will prioritise vouchers. I just can’t wait to see everyone again and spend some time sharing skills, laughter and good energy.

NEW CLASS IDEAS

So I have had a bit of time to think about new class ideas. One idea is a Cake Baking Masterclass. This will be a slightly longer class and you will learn how to make 1) Sacher Torte, 2) Genoise sponge layered with French Pistachio buttercream and 3) the Traditional Paris-Brest. I’m also investigating getting a wood fired oven for the garden so I can run some kick-ass pizza classes! But what I’m really looking for is some requests and ideas from you guys. What would you like to see in a baking class?
