After 13 years of joyful events in Tuscany, I'm delighted to invite you to my summerhouse in Denmark. Together we’ll delve into the heart of modern Danish cuisine, inspired by the official world's best restaurant, Noma, and the culinary renaissance it ignited across the country. But fear not, our weekend is not about fine dining! It’s a celebration of all good food, suitable for beginners and seasoned enthusiasts alike. The only requirement… a love of scrumptious food!
Over three days we’ll be embracing the spirit of Nordic cuisine, tailored for the home cook and taught by a professional chef and baker. Get ready to bake your way through the thrilling, the traditional, and the downright delicious wonders of Denmark!

Expert Guidance: With two teachers (myself and the wonderful Chef Michael) and my wonderful assistant you’ll have personalised attention and hands-on learning.
Irresistible flavours: Immerse yourself in the richness of local, seasonal ingredients, focusing on green proteins, fruits and Danish delights.
Bake, Cook, Explore: From indulging in pastries, tarts and buns, foraging and local excursions, every moment is a chance to create memories, make new friends, and experience the joy of cooking.

Programme Highlights to Whet Your Appetite!
Our culinary escape starts at 10am on Day 1 with a full programme until late afternoon on Day 3.
Each morning, we’ll meet in my kitchen, or weather permitting, on the terrace with a view of the archipelago. Waiting for you will be a delicious spread of coffee and pastries. We’ll dive into baking a tasty creation followed by a well-deserved lunch.
Post-lunch, we'll set out on an excursion to the local area. This could be immersing ourselves in the charm of small businesses and meeting local producers or sommeliers, a ceramics class, foraging, a sun-soaked beach trip or a relaxing walk. Returning in time for an afternoon coffee break, we'll reconvene in the kitchen. Guided by the expertise of Chef Michael, we'll conjure up an evening meal, transforming locally sourced ingredients into culinary masterpieces.
Price, Inclusions and Help From Me
Price per person is £800. This includes:
· Yummy lunches on all three days.
· Delicious dinners on Day 1 and Day 2.
· A total of five baking and cooking classes.
· You’ll be eating everything from smørrebrød, cinnamon buns, Scandi pizzas in the Ooni and fresh fish!
Not included: Flights and accommodation. But don’t worry, I’ll be on hand to send over a list of Airbnb’s / hotels in the area and can help you book the perfect place. This is my home turf, so I can answer your questions on travel, dietary requirements and all things Denmark. I can’t wait to welcome you!
Location and Accommodation
Our holiday home is located in Dyreborg, a cosy fisherman's village on the Funen archipelago. It’s easily reached by car from Billund or Copenhagen airport. Flights run regularly and Denmark is a swift 1 hour and 30 minutes from London.
There are lovely local Airbnb’s from £40-£75 per night per person. Or you can opt for the larger hotels in nearby Faaborg, only 7 km away.
Your Teachers
You can find out about me here but in a nutshell my classes are a celebration of the joy that comes from creating with your hands. I’m here to guide you to learn something new, unlock your creativity and have an amazing time doing it.
Chef Michael is a passionate teacher who, along with his wife, ran the wonderful restaurant Druen & Bønnen for almost a decade. His roots are in Funen and it’s his aim to give you skills for life whilst taking you on a journey into a world where meals are cooked from the heart.
Recently returned from an amazing culinary experience in Dyreborg, on the island of Funen in Denmark. Maria, Michael and Sofie were not only welcoming but amazing. We prepared, cooked and ate locally sourced food (and wine and beer!) - all fresh and extraordinarily tasty. We were a very mixed group from all over and we did a lot of laughing. We went foraging with a specialist guide, visited Faaborg and had afternoon coffee and cake (baked by us, of course) with locals Steen and Annette who have a local deli. We came home with vanilla cookies and our own Snaps with foraged ingredients which we will all open together at Christmas. It was over too quickly and I want to go back and do it all again! Thank you Maria for a wonderful weekend full of the most amazing memories.

A great experience making delicious food and meeting new people
We went to Maria's first Danish culinary weekend in her summer house in Dyreborg. The charming Maria was in charge of all things baking and Chef Michael the cooking. The theme was "Modern Danish cuisine with a green twist". We foraged, cooked, baked and ate great food and made new friends. We've come away with a cookbook so that we can have a go at all the delicious things we made back home. I am staying away from biscuits, cakes and pastries for a couple of weeks!
