Christmas is definitely the high season for baking! There are so many delicious treats to choose from which is why I’m running 3 Christmas Baking classes this year.
I’ve been baking Panettone for years, both here in my kitchen in London and on our culinary holiday in Tuscany. A homemade Panettone is a far cry from the store bought, slightly dry and artificial tasting ones you get in some shops. In my opinion a panettone should be laced with butter, dried fruits and citrusy flavours. A homemade panettone won’t keep for weeks like the shop ones, but on the other hand if it goes a bit stale, it makes fantastic French Toast!
Mincemeat during the month of December is definitely something that divides the waters. It took me a few years to get my head around it. I don’t love it, but together with a sweet pastry shell and topped with frangipane it is quite scrumptious. If you haven’t learned to love mincemeat yet - I’ll have an alternative for you in this class ;)
Finally we will finish this class off with some nutty Florentines dipped in chocolate. They look impressive and wrapped in a cellophane bag make the perfect hostess gift.

Mincepies topped with frangipane
Florentines with dark chocolate
