I am going to tell you one of my big baking secrets….I don’t like cupcakes. Controversial to some people I know, but I always find it a bit disappointing whenever I have a cupcake. The cake tends to be dry and the frosting is always way too sweet. We need to change that, because in reality a cupcake is just one slice of cake in a beautiful wrapping! So in this class I am going to teach you how to make my favourite Carrot Cake topped with a delicious cream cheese frosting. For the chocolate cupcakes we are going to use a whipped ganache instead of buttercream. Whipped ganache is your new secret baking weapon- trust me on this one. Finally we are going to finish off with the best banana muffins I have ever tasted, maybe because they have a streusel topping which takes them up a notch.
